Given lettucemeat.com features lettuce in its title, it seems long overdue to have a feature on deliciously underrated lettuce! Lettuce is a nutritional power-house which comes in many varieties (butter-head, Chinese, Crisp-head, Loose-leaf, Romaine-lettuce, Summer-Crisp), and consists of many phyto-nutrients that have health-promoting and disease prevention properties.
Fresh lettuce leaves are an excellent source of several Vitamin A and beta carotenes which have antioxidant properties. Vitamin A is required for maintaining healthy skin and good vision. It is also a rich of Vitamin K, which plays a role in increasing bone density and mitigating Alzehimer’s disease. In addition, lettuce contains good amounts folates and vitamin C. It also contains good amounts of minerals like iron, calcium, magnesium, and potassium, which are essential for body metabolism.
