This quick and healthy bread has become a staple in our household. The oats and whole wheat give it a rustic texture, while the honey provides a hint of sweetness. There are endless variations (e.g. add cheese, green onions, jalapenos, etc.), so one can change things up depending on the mood! Other whole grains such as flax or chia seeds work well in this recipe as substitutes for oats, so feel free to experiment. This can also become a vegan recipe by using soy or rice milk instead of cow’s milk.
Ingredients
- 2 cups rolled oats
- 2 cups whole wheat flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons honey
- 2 tablespoons vegetable oil
- 2 cups milk
Preparation
- Preheat oven to 350F.
- In a large bowl, combine oatmeal, flour, baking powder and salt. In a separate bowl, dissolve honey in vegetable oil then stir in the milk. Fold wet ingredients into dry until well-mixed. Pour the dough into a loaf pan.
- Bake in preheated oven for about one hour, or until bottom of loaf sounds hollow when tapped.
